The process behind creating this Early Harvest Organic EVOO is very meticulous. The olives are hand picked in early October. Within a few hours of collection the olives are cold pressed using a closed loop system and sealed in stainless steel casks under a nitrogen layer to eliminate oxidation. Also due to its early harvest date, it is very high in polyphenol, healthy substances found in an EVOO, content!
